In an international city such as Singapore, one would expect that the hodgepodge of restaurants would contain a few decent Spanish restaurants. But in reality they are few and far between, until FOC came along. The team at FOC has created one of the island’s best Spanish tapas restaurants, with killer small plates and beautiful cocktails all set in a hip and trendy restaurant which will stand the test of time.
Decorated in an austere black, red and white colour palate with design features which are just crying out for attention. The hanging over-sized fiberglass sculptures, open kitchen and gorgeous cocktail bar meld together to create a trend setting space with tons of character.
Food and drink – delicious small plates
The cuisine at FOC focuses on modern Spanish tapas with a few curve balls included. The paella and fideua were not strictly Catalonian cuisine. But they were both well executed and semi-authentic variations of those found in the Spanish city of Valencia.
The charred grilled octopus is a must try at FOC, with wonderfully succulent flesh and crisp burnt bits of flavour on its exterior. It is evident that a lot of love goes into each tentacle; our best guess is that it was brined for hours before being blasted in the Josper charcoal grill.
Cocktails are original renditions of classics with a few bespoke concoctions thrown in for good measure.
